This is an 8 course dinner paired with Domaine Pouillon wines.

Edelzwicker :

A noble white blend inspired by Alsace.  With notes of peach stone, minerals, green apples, and spice this Edelzwicker is a comination of fruit and freshness for your palate.  Dry.

35% Pinot Gris, 35% Gewurztraminer, 30% Riesling

Neutral Barrel Fermented
A very complex white wine that can be enigmatic at first. Cornflower, sweetgrass, honeydew melon, and bartlett pear all dance on the nose. Pronounced acidity gives this wine a pleasant buoyancy. Supremely long finish: piquant in the front, creamy on the mid-palate, and herbaceous in the back-palate.

Cinsaut Nouveau:
A beautiful Nouveau style (Carbonic maceration) red wine . Light and fruit forward.

French Press:

100% Syrah
Neutral Barrel Fermented.
Juicy and velvety Syrah with notes of coffee, cassis, mulberry and vanilla. Excellent tannin structure and balanced acidity.


50% Syrah, 50% Cabernet Sauvignon
Neutral Barrel Fermented
Fermented in neutral oak barrels for a smooth finish with notes of bright cherry, cedar, blackberry bramble, earth, and cranberry.


100% Grenache fortified wine made in the Solera method from Banyuls, France. An excellent chocolate pairing.
